New dining at 45 floors above Tokyo
The Ritz-Carlton, Tokyo, opened two new restaurants on Sept. 4, replacing the all-day dining outlet Forty Five on the 45th floor.
Azure 45 serves creative and seasonal French seafood, focusing on fresh fish, vegetables and fruit. Signature dishes, including toki salmon, lobster consomme and grilled foie gras ravioli, are prepared under the direction of Executive Chef Kiyonari Araki, who has worked in several Michelin-starred restaurants in France.
Towers Grill, a classic American eatery, offers some of the finest meats and seafood from around Japan, including A-4-rank Tankaku beef, botan shrimp, abalone from Sanriku, Miyagi Prefecture, and very rare Ezo pork loin from Tokachi, Hokkaido. Diners will have the opportunity to become members of the Knife for Life club, which provides them with their own Laguiole knife that will be engraved, maintained and stored for future visits.
Both restaurants, with extraordinary views of the Tokyo skyline, are open seven days a week and offer a private dining room that can seat up to 17 guests. A la carte dishes are available in addition to courses.
Azure 45 and Towers Grill serve breakfast between 6:30 a.m. and 10:30 a.m. and lunch between 11:30 a.m. and 2:30 p.m. Azure 45 serves dinner from 5:30 p.m. to 9 p.m. while Towers Grill serves dinner from 5:30 p.m. to 10 p.m.

Auspicious autumn lunch course
The Grand Hyatt Tokyo's Japanese restaurant, Shunbou, is offering its autumn lunch menu through Oct. 31.
Shunbou will be featuring "Fortune Foods" that use traditional seasonal ingredients, such as matsutake mushrooms, shrimp, chestnuts and lotus roots. Each ingredient is chosen for its properties and the "fortune" that it bestows. For example, the curved back of the shrimp represents blessings of longevity; chestnuts, historically carried on the battlefield by Japanese warlords, are said to bring victory; and the holes in the lotus roots promote one's foresight.
The meal will be served in several courses kaiseki-style, which is widely acknowledged as representative of traditional Japanese cuisine.
The meal costs ¥7,500, not including tax and service charge, and is available from 11:30 a.m. to 2:30 p.m. on weekdays and until 3:00 p.m. on weekends and holidays.

Kobe goes Korean at the Sheraton
The Kobe Bay Sheraton Hotel & Towers' buffet restaurant Garden Cafe is holding a Korean Food Fair during lunch and dinner through Sept. 30.
The hotel has invited guest chef Meong Hoon Sang from sister hotel the Sheraton Incheon. Among some 80 items to be served will be authentic Korean dishes such as fresh homemade kimchi, kimbap (Korean rolled sushi), samgyetang (ginseng chicken soup), bulgogi (marinated beef) with assorted mushrooms, chijimi (pancakes) and tofu chige (stew).
The lunch buffet runs from 11:30 a.m. to 2:30 p.m. and costs ¥2,800 for adults and ¥1,700 for children ages 6 to 12 on weekdays and ¥3,400 and ¥2,100, respectively, on weekends and holidays. The dinner buffet runs from 5:30 p.m. to 9:30 p.m. and costs ¥3,500 for adults, ¥2,200 for children ages 6 to 12 and ¥2,450 for those aged over 60 on weekdays; on weekends, it will cost ¥4,400, ¥2,640 and ¥3,080, respectively.
